Recipe: Powered Up Buddha Bowl

I talk a lot about BALANCE.  And, balance applies to my plate, too!  So, when Nutrilite talked to me about their “food first nutrition” and #CookingWithColor, I  was beyond inspired to create a dish that incorporated as many phytonutrients as  possible.  THAT is balance!

 

Plants produce phytonutrients as a defense mechanism to protect themselves from their environment and are a building block for healthy living.  A diet rich in colorful fruits and vegetables will provide us all with a range of health benefits for our bodies.

 

In my very favorite Powered Up Buddha Bowl, I highlight:

 

RED fruits and vegetables: which support heart health (with beets!)
ORANGE fruits and vegetables: which support healthy eyes (with kabocha!)
GREEN fruits and vegetables: which promote cellular health (with broccoli!)
PURPLE fruits and vegetables: which help promote brain health (with red cabbage!)

 

AND, I  add Nutrilite’s All Plant Protein powder and nutritional yeast to level up the polenta!  See below for recipe and directions.  But, know that you can swap out any color veggie for another one of the same color (I sometimes swap broccoli for brussels sprouts- yum!).

How to make a perfect Buddha Bowl Every Time:
1. Chop 1-2 cups RED (my fave is beets)
2. Chop 1-2 cups ORANGE (my fave is kabocha)
3. Set aside your YELLOW (I  use ½ cup polenta POWERED UP!)
4. Chop 1-2 cups GREEN (my faves are broccoli, brussel sprouts and kale)
5. Chop 1-2 cups PURPLE (my fave is purple cabbage or eggplant)
6. Place all chopped ingredients on baking sheet lined with parchment paper, lightly oil (I  prefer olive oil spray for uniformity), salt, pepper, and add your favorite spices.
7. Place veggie tray in oven at 400 degrees for 40 minutes, flipping once.  If using kale, it takes about 10 minutes.

 

While veggies are roasting, start you POWERED UP Polenta!

 

1. Bring 2 cups water to boil
2. Add ½ cup dry polenta
3. Lower heat to simmer and whisk for 6 minutes while adding remaining ingredients
4. Add 2 TBSP Nutrilite All Plant Protein Powder
5. Add 1 TBSP Nutritional yeast + pinch of salt, whisk
6. Add pepper + seasonings of choice
7. Add 1 TBSP plant based buttery spread, whisk
8. Let cool
9. Plate half of polenta with half of roasted vegetables
10. ENJOY!
