Super-Powered Oat Bread: What’s for Breakfast

This is one of my absolute favorite ways to start the day.  This super-delicious, super-powered oat bread is chock-full of nutrients, and eaten on it’s own, or topped in some delicious almond butter or jam, it is guaranteed to keep you full and feeling energized all day long! Enjoy!

Ingredients:

  • 1 cup oats
  • 1 cup boiling water
  • ¼ cup apple sauce
  • ¾ cup water
  • 2 tablespoons almond butter
  • ¼ cup dates
  • 3/4 cup oat flour
  • ¼ cup hemp seeds
  • ¼ cup chia seeds
  • ¼ cup ground flax seed
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

 

Directions:

  • Preheat oven to 350 and lay parchment paper on a large cookie sheet
  • Combine boiling water and oats, allow to sit for 10-15 minutes
  • Meanwhile, mix apple sauce, water, almond butter and dates in a blender or food processor until smoothly puréed
  • In a large mixing bowl, combine oat flour, chia seeds, flax seed, baking powder, cinnamon and salt.  Then, pour in mixed wet ingredients and wet oats, and mix together until smooth.
  • Spread mixture evenly onto a cookie sheet, flatten with a large spatula, and bake for 25 minutes.   Allow to cool completely before cutting into even slices
