Overnight Oats: the original!

I have never had so many requests for a recipe as I did when I started instagramming overnight oats :) I got hooked on this amazing breakfast when my dear friend, Gena Hamshaw, author extraordinaire of the new vegan cookbook, Choosing Raw, introduced them to me with one of her recipes. I make all sorts of variations on this one in particular, by adding spirulina, coconut, carob, lucuma and almond butter. You name it, and it probably tastes great!

This here is my favorite standard overnight oats recipe — absolutely perfect for the steamy heat of August, when the idea of turning on a hot stove top does not sound at all appealing. Try experimenting with the ingredients and switch it up to your liking!

The Ultimate August Breakfast

Serves 1

Ingredients

  • 1/3 cup rolled oats
  • 1/2 Tbsp. chia seeds
  • 1/2 banana, mashed
  • 1-2 Tbsp. chopped raw almonds
  • 1-2 Tbsp. raisins
  • Pinch ground cinnamon
  • Pinch ground ginger
  • Pinch salt
  • ½ cup almond milk
  • Optional: Extra almond milk, raw nuts, berries, sliced banana, dried fruit, or nut butter to garnish, if desired

Directions

Mash banana with a fork in a mason jar or a container with a seal so you can refrigerate overnight.

Add all dry ingredients and mix.

Add almond milk and stir until well blended.

Cover and refrigerate overnight.

In the morning, remove from the fridge and stir, adding more milk if desired.

Top things off as you like it and enjoy!
