Nutty Kelp Noodles

It’s been a while since I have had kelp noodles, and now after having this deliciousness, I doubt it will ever be this long again.  They are so yummy and SO easy to make! The trick to kelp noodles is to soak them first – they taste sooooo much better after.  What is your favorite kelp noodle recipe? I’d love to know.  Please leave your answers in the comments below!

Ingredients:

  • 1 package kelp noodles (12 ounces)
  • 3 tablespoons almond butter
  • 2 teaspoons miso
  • 1 teaspoon ponzu or tamari
  • 1/2 teaspoon sesame oil
  • pinch of red pepper flakes
  • salt and pepper to taste

Directions: soak kelp noodles, submerged in a bowl of very warm water.  While they soak, combine the rest of the ingredients together in a medium large mixing bowl with a whisk.  After a few minutes of soaking, drain the water from the kelp noodles, and add them to the sauce.  Cover and refrigerate for at least 30 minutes.  Serve with any garnish of choice (green onions, cilantro and sugar snap peas are all great choices).  Enjoy!
