Confetti Bean Salad

Serves: 15

Ingredients:
1/2 cup lime juice
1 teaspoon cayenne
2 tablespoons cumin
1 garlic clove, minced
1 1/2 cups corn kernels
4 cups chopped jicama
1 large red bell pepper, chopped
3 large tomatoes, diced
3 stalks celery, diced
1 bunch cilantro, chopped
1/2 large red onion
2 cans (14 ounces each) black beans, rinsed
Salt
Pepper

Directions:
In a small bowl, whisk together lime juice, cayenne, cumin, and garlic and set aside. In a large bowl, combine remaining ingredients, adding salt and pepper to taste. Add lime juice mixture and mix well.
