BBQ Baked Beans

Serves: 10

Ingredients:
2 cups dried navy beans
2 cups vegetable stock
1 large yellow onion, diced
1 green pepper, chopped
2 cloves garlic, minced
1 cup tomato purée
1/3 cup barbeque sauce (I choose True Made Foods!)
1/4 cup apple cider vinegar
1.5 tablespoons vegan worcestershire sauce
1 tablespoon chili powder
1 tablespoon maple syrup

Directions:
1. Soak beans in a large bowl of water overnight or for at least 8 hours.

 

2. Preheat oven to 300 degrees.

 

3. Coat a large oven-safe pot with a thin layer of vegetable stock, and set the rest aside.

 

4.  Sauté onion, green pepper, and garlic for 3 to 4 minutes, adding liquid as necessary.

 

5.  Add tomato puree, barbecue sauce, apple cider vinegar, worcestershire sauce, chili powder, and maple syrup. Stir and cover.

 

6. Place pot in the oven for 4 hours, checking every hour. If more liquid is need, add 1/4 cup vegetable stock at a time, stir, and recover.

 

7. Allow to cool at least 20 minutes before serving.
